


The Closing Team Dinner of Manifesta 15 was a was a sixty-six-meter-long feast, an incredible culinary celebration. Together with longtime friends Stefano and Max Colombo, and their brilliant teams from Barcelona’s iconic restaurants Xemei and Bar Brutal, we set out to create something memorable. Partnering with Manifesta 15 Barcelona Metropolitana had been on our minds for a while, and this felt like the perfect moment to make it happen.
The dinner was held at The Three Chimneys, a historical landmark reopened to the public for the first time thanks to the Nomadic European Biennial.
The menu of the night featured:

Seasonal vegetables with almond cream
Smoked stuffed pancetta
Meat broth with juniper oil

Celery cannelloni filled with pumpkin and mushrooms, served with béchamel sauce and a celery juice reduction
Orange risotto with cheese and cardamom
Cod with potato purée, leek and Iranian lemon
Grilled veal tongue with light curry sauce, spring garlic and green apple pickle

White chocolate cream, baked pears,
gorgonzola, hazelnut crumble and a shot of vin brûlé
The menu was executed in an ephemeral kitchen specifically built by Bar Brutal and Xemei for the evening — in a venue with no running water.
This event came to life thanks to the dedication and hard work of both the Manifesta 15 team and the teams of Bar Brutal and Xemei, with whom I worked closely throughout the planning process and during the evening itself.
